Boss of the Quesadillas
Ingredients
- 2 large flour tortillas
- 1 cup cooked chicken (shredded, or sub pulled pork/beef)
- ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ½ small red onion, thinly sliced
- ½ cup Sauce Bros Boss of the Sauce BBQ Sauce
- 1 tbsp butter or olive oil
- Optional: sliced jalapeños, cilantro, sour cream, or avocado for topping
Instructions
Mix the Filling:
In a bowl, toss shredded chicken with ¼ cup Boss of the Sauce BBQ until coated.
Build the Quesadilla:
- Heat a skillet over medium heat.
- Place one tortilla down and sprinkle with half the cheese.
- Add BBQ chicken mixture and red onion slices.
- Top with remaining cheese and second tortilla.
Cook It:
- Brush with butter or oil.
- Cook for 3–4 minutes per side until golden brown and cheese is melted.
Slice & Serve:
- Cut into wedges.
- Drizzle with extra Boss of the Sauce BBQ and add toppings of choice.
Notes
Perfect game-day food! Serve with a side of ranch or sour cream for dipping and a cold drink.
